Common Sensory Challenge Of Menthol in Beverages

Short Cooling Duration

Traditional cooling agents lose their cooling effect quickly when exposed to heat or air.

Hard to Balance Cooling Performance and Taste

Low levels of menthol provide little cooling, while higher levels can cause bitterness, irritation, and a burning sensation.

Feel Unnatural

Traditional cooling agents deliver a sharp, short-lived cooling effect mainly in the throat, creating an artificial experience with little flavor retention.

Traditional Cooling: Activating Cooling Receptors, but Also Heat Signals

Traditional cooling agents, such as menthol, create cooling sensations primarily by activating the TRPM8 receptor. However, menthol also stimulates heat-sensitive receptors including TRPV3 and TRPM4, which can introduce irritation, burning sensations, and an overall less natural cooling experience.

EPC's New Understanding of Cooling Perception

Through extensive research on TRP channel interactions, EPC discovered that cooling perception is influenced not only by the strength of cooling signals, but also by the balance between cooling and heat-related pathways.

By reducing interference from heat-sensitive receptors such as TRPV3 and TRPM4 while preserving TRPM8-mediated cooling signals, it is possible to enhance sensitivity to cooling, increase cooling intensity and duration, and minimize irritation and burning sensations.

Because TRPV3 and TRPM4 are widely distributed throughout the oral cavity, throat, and airway, this mechanism also extends cooling sensations across a broader sensory area, delivering a cleaner, more balanced, and longer-lasting cooling experience.
