Redefining Flavor Perception

Traditionally, flavor has been regarded as an inherent property of food. As a result, flavor enhancement has largely focused on adding flavorings, sweeteners, and other ingredients to increase sweetness, aroma, and overall flavor intensity.

EPC's research has found that flavor is not an inherent property of food, but a multi-sensory experience constructed through the interaction between food, the human body, and the brain. During consumption, taste, smell, oral sensations, and cognitive factors work together to shape the flavor ultimately perceived by consumers.

Further research suggests that retronasal olfaction plays a critical role in flavor formation. Once food enters the oral cavity, sensory signals are processed and integrated through complex neural mechanisms, contributing to the construction of the overall flavor experience.

Based on this scientific understanding, EPC's flavor enhancement technology goes beyond simply intensifying individual flavor attributes. Instead, it is designed to optimize the overall sensory experience, enabling richer, more natural, and longer-lasting flavor perception while improving consumer acceptance and encouraging continued consumption.
